Field-to-table fish checklist
A good meal begins with legal harvest, species knowledge, humane handling, rapid temperature control, and a clean separation between the field, the cutting surface, and ready-to-eat food.
Before the water
- Current license, species rules, size limits, seasons, and area closures
- Reliable species-identification reference
- Cold-storage plan sized for the catch and conditions
- Clean knife, scaler or pliers, gloves, and washable work surface
- Local guidance for invasive species, transport, and carcass disposal
At harvest
- Identify the fish before keeping it
- Record or tag the catch when required
- Use the accepted humane dispatch method for the species
- Bleed only when appropriate and lawful
- Chill promptly with food-safe ice or another verified cold system
- Keep the catch protected from sun, warm water, fuel, and dirty surfaces
Transport and cleaning
- Maintain cold temperature through the full trip home
- Prevent meltwater from contaminating other food
- Clean on a stable, washable board with potable water where permitted
- Separate guts and waste according to local disposal rules
- Wash hands and sanitize knife, board, cooler, and contact surfaces
Kitchen handoff
- Inspect smell, texture, temperature history, and contamination risk
- Refrigerate promptly or freeze in meal-sized, well-labeled packages
- Use separate tools or complete sanitation before ready-to-eat preparation
- Cook according to current food-safety guidance and individual health needs
- When safety or legality is uncertain, do not serve the fish
